Recipe: Greek Clam Soup

I was looking for a substitute for clam chowder, something healthier. I found a recipe for Greek style clam soup and changed it up a bit. I've tried other non-chowder soups and this is by far the best out of the bunch. Although I used chopped clams in my recipe you can also you use a couple of pounds of fresh clams in the shell with no changes to the recipe. Make sure you throw out any clams that don't open after cooking.
  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1/2 teaspoon salt
  • 5 garlic cloves, minced
  • 3 cups chopped tomatoes
  • 3 cups water
  • 1 cup dry white wine
  • 1/2 pound of chopped clams (with clam juice if you have it)
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh oregano
  • 1/4 cup chopped fresh dill
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 3 cups cooked rice (optionally orzo or rice noodles)
  • Low-Fat Cheddar cheese or Feta cheese
Saute onions, salt, and garlic in oil. Stir in tomato and cook for 8 minutes, stirring occasionally. Stir in 3 cups water, wine, and clam juice and bring to boil. Reduce heat and simmer for 6 minutes. Add clams to pot and cook for 8 minutes then add rice and cook for an additional 2 minutes and remove from heat. Stir in parsley, oregano, lime juice and lemon juice. Top each serving with 1 tablespoon of cheese.
